½ kg mizithra
1/2 kg. flour for dough


Take a small piece of dough (the size of an apricot), make a small ball, open it slightly in the middle, fill it with a tbsp. mizithra and close it again. Then slightly knead the dough and mizithra with your fingers, from the centre outwards, giving the pie the shape of a dessert plate. Then put it in a very hot non-stick frying pan and cook it without oil until it browns on both sides. It is served with honey on top.
Attention: Your success completely depends on how you roll out the pastry sheet, that is, the pie has to be very thin (2-3 millimetres).
